Caramel is a very pleasant aroma that generates during the roasting process during chocolate production. In a high-quality chocolate, this aroma must always be mild and not too intense. In fact, a very intense cocoa roasting is a poor production practice that eliminates the other aromas. Caramel aromas can be found in chocolates coming from several parts of the world.
